"My husband and I attended a Tapas evening with Main Course.We really enjoyed the experience and invaluable tips. Last night we remade several of the recipes and had a fab dinner. Instead of chickpeas I used a can of red kidney beans and slightly mashed them with and potato masher. Lots of wilted baby spinach and wine vinegar ( as that was what we had). Served it with homemade bread and French Champagne. It was fabulous. We then made the skewers with chorizo and prawns. Served with Romanesque sauce. It too was fab. Then we did the chicken and served it with Aioli. Great. We also made the lemon,cinamon,almond meal dessert with greek yoghurt. Just lovely. Thank you for the inspiration. Lovely memories." "I just want to say how great it was. It was beyond my expectations, and I came away with some great tips and advice, and obviously a dish full of great tasting chocolate. I was really impressed with the tutor. She was great, very helpful, and honestly made it easy to understand. She took the time to make sure we all walked out with some great looking and tasting treats. I appreciated having Guy there to help with the cleaning, it really meant we got to concentrate on getting our chocolates made. Guy took the time to show us how to make a perfect piping bag made out of baking paper - a trick that will be very helpful. "I really enjoyed the class, it was great to get enthusiastic about cooking again - I think one can get a little lazy when mostly cooking for oneself - so the class was just what I needed. I'm looking forward to attending another and learning something else. Something else funny was that I've told lots of people about the 'tricks of the trade' from Alison (washing knife under water to remove odours from chopping, the orange cutting method, etc) that have certainly impressed people I would regard as far more expert than I at cooking, so they think I'm a master-cook now!
