Our TeamOur Team Sonya Oyston & Eric Morgan - MC Custodians This cosmopolitan duo are the custodians of Main Course with some fabulous plans for Main Course in 2010 with new classes, adventurous menus and fun new formats.Sonya learnt her craft in Switzerland, before ending up in the UK convincing budding chefs to strut their stuff on unsuspecting customers. After getting fed up looking at snow capped mountains and historical buildings, Sonya travelled to Asia where she trained chefs and service staff. She returned to New Zealand in time for the millennium celebrations and has worked ever since in hospitality training in Auckland. She is passionate about trying the strange and the not so strange ingredients and recipes of other cultures. Sonya enjoys cooking with chili, from fiery Thai to flamboyant Mexican and cultivates numerous varieties of red hot chili peppers in her garden, which she converts into a delicious beijan hot sauce that's not for the faint hearted. Eric, a chef and trainer with almost 40 years hospitality experience enjoys cooking and has worked in over 30 different countries ranging from America and Hong Kong to Malaysia and Nepal. He has picked up many useful tips and techniques in his travels which he likes to pass on to others. He specializes in making celebration cakes and his creative designs have won him several gold medals at the culinary Olympics, which are held every 4 years - just like the other ones. His Welsh origins are the only thing he has in common with Tom Jones and when he's not making cakes he is kept busy looking after his 3 year old daughter Quinn and 2 year old grandson Maximillian. A sturdy student, she is studying something scientific which ends in 'ology' and sounds strange. No doubt she'll graduate to a job in which she can advise small children on the health risks of eating yellow lollies. Her hobbies include dance, eating breakfast and languishing at her parent's gorgeous bach in Hahei. Jason Marshall - Chef
After years & years & years of hard, hot slog & crap pay in some of Auckland's finest restaurants Jason decided that his wealth of talent should be better rewarded - so he became a Personal Trainer. As you do. He does not resemble the stereo-typical chef (over weight, pale & with vices). No, no! His tanned, rippled and healthy appearance is an excellent conversation starter, especially for our more "colourful" clients who think he is fabulous! Darling. Since starting at Main Course in October 07 he has educated us all on trimmer triceps and better ways to cook duck. What a guy!
Guy is an engineering student from Bethells Beach - we find his amazingly intelligent & sensitive style of conversation very refreshing and if we could put money on him "going places" and travelling a very rewarding life path then we'd back him to win. Genuine & sincere character like Guy's is seldom found in a "generation y" although we'll never understand how he takes over 40 minutes to make his hair look like he was dragged through a hedge backwards. Youngsters! Honestly though, Guy is the type of guy your Mum would want you to marry.
The newest recruit to the mighty sink at Main Course, Nathaniel is an out & out geek. We don't mean that in a derogatory way either - he's the first one we call when anything in our electronic driven lives stuffs up. He's a whizz on the PC and works in the same methodical way here! His hobbies are anything computer and we think that if he could eat computers instead of needing real food he probably would. He has a shy sense of humour that sneaks up on you least expect it and a calm way with hospitality and getting the job done - which is nice to work with when we've a class full of mad people.
This gorgeous Aussie (from Brisbane) wow'd us with his un-egotistical and unflappable presence, let alone his mass of knowledge, ninja like knife skills and dashing smile - so we gave him heaps of work in the hope that we could assimilate him completely into the folds of Main Course. His other job is 2nd chef at Eden Cloakroom with Luca Villari (another previous chef here) - where he mans the tiny kitchen with purpose and integrity. On his day's off he loves to fish off the wild west coast beaches and ramble through the bush dreaming up new culinary delights.

Jen has been teaching at Main Course since 2005. Originally a nurse she gave this up to become a chef. Jen spent 12 years as a private chef on Superyachts before returning to NZ to have a family and teach cooking. Her Fastidious nature is camouflaged by her blindingly pleasant and attentive ways - all our clients adore her sincerity, sharp sense of humour and no nonsense attitude. Jen's classes are informative, generous and tailored to suit each of your needs.
