Sonya Oyston & Eric Morgan - MC Custodians
This cosmopolitan duo are the custodians of Main Course with more fabulous plans for Main Course in 2011 with new classes, adventurous menus and fun new formats.
Sonya learnt her craft in Switzerland, before ending up in the UK convincing budding chefs to strut their stuff on unsuspecting customers. After getting fed up looking at snow capped mountains and historical buildings, Sonya travelled to Asia where she trained chefs and service staff. She returned to New Zealand in time for the millennium celebrations and has worked ever since in hospitality training in Auckland. She is passionate about trying the strange and the not so strange ingredients and recipes of other cultures.
Eric, a chef and trainer with almost 40 years hospitality experience enjoys cooking and has worked in over 30 different countries ranging from America and Hong Kong to Malaysia and Nepal. He has picked up many useful tips and techniques in his travels which he likes to pass on to others.
He specializes in making celebration cakes and his creative designs have won him several gold medals at the culinary Olympics, which are held every 4 years - just like the other ones. His Welsh origins are the only thing he has in common with Tom Jones and when he's not making cakes he is kept busy looking after his 4 year old daughter Quinn and 3 year old grandson Maximillian.

Alannah has added scientific method to her work whilst practicing her project management and statistical skills.

Our resident IT expert, Nathaniel continues to fascinate us with his views on life.

Our Chefs
Jason Horwood
This gorgeous Aussie (from Brisbane) has wowed us with his un-egotistical and unflappable presence, let alone his mass of knowledge, ninja like knife skills and dashing smile - so we gave him heaps of work in the hope that we could assimilate him completely into the folds of Main Course. His other job is Head Chef at Eden Cloakroom where he mans the kitchen with purpose and integrity. On his days off he loves to fish off the wild west coast beaches and ramble through the bush dreaming up new culinary delights.
Jen Jordan
Jen has been teaching at Main Course since 2005. Originally a nurse she gave this up to become a chef. Jen spent 12 years as a private chef on Superyachts before returning to NZ to have a family and teach cooking. Her fastidious nature is camouflaged by her blindingly pleasant and attentive ways - all our clients adore her sincerity, sharp sense of humour and no nonsense attitude. Jen's classes are informative, generous and tailored to suit each of your needs.
Marco Tridenti
Marco could make pasta before he could walk and is ardent in his love of food. His Italian heritage is evident from this and the charming accent with which he fascinates the ladies in particular.
